Description

Delicious homemade granola bars made with a blend of oats, Rice Krispies, graham crackers, and a sweet honey-butter mixture, studded with mini chocolate chips and marshmallows. Perfect for a quick snack or an on-the-go breakfast.

Ingredients

Scale

Wet Ingredients

  • 6 tablespoons unsalted butter
  • 6 tablespoons brown sugar, packed
  • 2/3 cup honey

Dry Ingredients

  • 3 cups rolled oats
  • 1 1/2 cups Rice Krispies cereal
  • 1/2 cup graham crackers, crushed
  • 1/2 teaspoon salt

Add-ins

  • 1/2 cup mini chocolate chips
  • 1/2 cup cereal marshmallows

Instructions

  1. Prepare Pan: Spray an 8×8 inch pan with vegetable oil and line the bottom with parchment paper to prevent sticking and make removal easier.
  2. Melt Ingredients: In a pot over medium heat, melt the unsalted butter, packed brown sugar, and honey together. Bring the mixture to a gentle boil and cook for 2 minutes, stirring to combine and dissolve the sugar.
  3. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, Rice Krispies cereal, crushed graham crackers, and salt. Pour the melted butter-honey mixture over the dry ingredients and mix thoroughly until everything is evenly coated. Allow this mixture to cool for 20 minutes so it thickens slightly.
  4. Add Mix-Ins: Carefully fold in the mini chocolate chips and cereal marshmallows into the cooled mixture to distribute them evenly without melting the marshmallows.
  5. Press and Chill: Press the mixture firmly into the prepared pan, ensuring it’s tightly packed. Place the pan in the refrigerator and chill for 2 hours to set the bars properly.
  6. Slice and Serve: After chilling, remove the bars from the pan using the parchment paper edges and cut them into 16 equal pieces. Serve immediately or store in an airtight container.

Notes

  • Make sure to let the melted mixture cool slightly before adding marshmallows and chocolate chips to avoid melting them.
  • Use parchment paper for easy removal and cleaner slicing of bars.
  • Store the granola bars in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
  • You can customize the mix-ins by adding nuts, dried fruits, or seeds for extra texture and flavor.
  • Press the mixture firmly into the pan to ensure bars hold together well after chilling.
