Description

Tortilla Chip Enchiladas are a creative and comforting dish that combines crunchy tortilla chips with a savory ground beef mixture, all baked in a rich red enchilada sauce and topped with melted cheese. This easy-to-make casserole is perfect for a family dinner and can be customized with shredded chicken or ground turkey as well as your favorite toppings.

Ingredients

Scale

Main Ingredients

  • 1 pound ground beef (or substitute with shredded chicken or ground turkey)
  • 1 bag tortilla chips (about 12 ounces)
  • 3 cups shredded cheese (cheddar or Mexican blend)
  • 28-ounce can red enchilada sauce
  • 4-ounce can diced green chilies, drained
  • 1 teaspoon ground cumin
  • ½ cup salsa

Optional Toppings

  • Sliced olives
  • Chopped green onions
  • Sour cream
  • Guacamole

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to get it ready for baking the enchilada casserole.
  2. Cook ground beef: In a large skillet over medium heat, cook the ground beef until it’s fully browned, stirring occasionally. Drain any excess fat to keep the dish from being greasy.
  3. Add seasonings: Stir in the diced green chilies, salsa, and ground cumin into the cooked beef. Let it cook for an additional 2 minutes to blend the flavors.
  4. Prepare tortilla chips: In a large mixing bowl, gently break up the tortilla chips into bite-sized pieces to avoid overly large chunks.
  5. Mix enchilada base: Add the beef mixture and 1 cup of shredded cheese to the bowl with the tortilla chips. Pour in the red enchilada sauce and mix everything gently but thoroughly to coat the chips evenly.
  6. Grease baking dish: Lightly grease a 9×13-inch baking dish with non-stick spray to prevent sticking.
  7. Assemble casserole: Transfer the tortilla chip and beef mixture into the prepared baking dish and spread it out evenly.
  8. Add cheese topping: Sprinkle the remaining 2 cups of shredded cheese evenly on top of the assembled casserole.
  9. Bake: Cover the dish with foil and bake in the preheated oven for 50 minutes, until the cheese is melted, bubbly, and golden.
  10. Rest: Remove from the oven and let the casserole rest for 5 minutes to set before serving.
  11. Garnish and serve: Add optional toppings like sliced olives, chopped green onions, sour cream, or guacamole as desired to enhance flavor and presentation.

Notes

  • You can substitute the ground beef with shredded chicken or ground turkey for a lighter version.
  • For extra heat, consider adding diced jalapeños or hot sauce to the beef mixture.
  • Use corn tortilla chips to keep the recipe gluten-free.
  • Letting the casserole rest before serving helps it slice better and enhances flavors.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
