Description

This SUPER BOWL Roasted Garlic Aioli is a creamy, flavorful dip made from mellow roasted garlic, mayonnaise, and a hint of lemon and Dijon mustard. Roasted Garlic

  • 1 whole head garlic
  • 1 tablespoon olive oil

Aioli Base

  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (optional for extra richness)


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the garlic.
  2. Prepare Garlic: Slice the top off the whole garlic head to expose the cloves, then drizzle with 1 tablespoon olive oil. Wrap the garlic head tightly in foil.
  3. Roast Garlic: Place the foil-wrapped garlic in the oven and roast for 35 to 40 minutes until the cloves become soft, golden, and fragrant.
  4. Cool and Mash: Let the roasted garlic cool slightly. Squeeze the softened cloves out into a small bowl and mash them into a smooth paste.
  5. Mix Aioli: Add the mayonnaise, lemon juice, Dijon mustard, salt, black pepper, and optional olive oil to the mashed garlic. Stir until fully combined and creamy.
  6. Adjust Flavor: Taste the aioli and adjust seasoning if needed, adding more salt, pepper, or lemon juice to your preference.
  7. Chill: For best flavor, chill the aioli in the refrigerator for at least 30 minutes before serving.
