Instructions

  1. Prepare the seasoning and chicken: In a small bowl, whisk together the taco seasoning, salt, and black pepper until well combined. Trim and slice the chicken thinly crosswise, then pat dry with paper towels. Rub the spice mixture evenly onto all sides of the chicken pieces.
  2. Cook the chicken: Heat 2 tablespoons of vegetable oil in a 12-inch nonstick skillet over medium-high heat until shimmering and small wisps of smoke appear. Add the seasoned chicken and stir frequently, cooking until browned and fully cooked through, about 5–7 minutes. Transfer the chicken to a serving platter and cover with foil to keep warm.
  3. Sauté the vegetables: Add the remaining 2 tablespoons of vegetable oil to the same skillet and heat again over medium-high heat until the oil smokes slightly. Add the sliced bell pepper and onion, stirring often, and cook until they begin to brown and soften, about 5–7 minutes. Turn off the heat and stir in the lime juice and chopped cilantro.
  4. Serve the fajitas: Transfer the cooked vegetables to the platter with the chicken. Serve buffet style with warmed flour tortillas, shredded Monterey Jack cheese, sour cream, salsa, diced avocado, and lime wedges, allowing everyone to assemble their own fajitas.
