Description

Soft Pretzel Bites are deliciously chewy, golden brown snacks perfect for sharing. Made from a simple yeast dough, boiled briefly in a baking soda bath for that classic pretzel texture, then baked to perfection and sprinkled with coarse salt. Perfect as a party appetizer or a fun homemade treat.

Ingredients

Scale

For the Dough

  • 1 ½ cups warm water (110°F)
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 tablespoon sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt

For Boiling

  • 10 cups water
  • 2/3 cup baking soda

For Finishing

  • 1 egg yolk beaten with 1 tablespoon water (for egg wash)
  • Coarse salt (for topping)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine warm water, active dry yeast, and sugar. Let the mixture sit for 5 minutes until it becomes frothy, indicating the yeast is active. Then add the all-purpose flour and salt, mixing until the dough comes together. Knead the dough for 5-7 minutes until it is smooth and elastic. Cover the dough and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  2. Preheat Oven: Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper to prepare for baking the pretzel bites.
  3. Boil Water and Baking Soda: In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a rolling boil. This baking soda bath will give the pretzel bites their distinctive chewy crust and color.
  4. Shape the Pretzel Bites: Once the dough has risen, punch it down to release air. Divide the dough into 6 equal pieces. Roll each piece into a rope about 12-15 inches long, then cut each rope into 1-inch bite-sized pieces.
  5. Boil the Pretzel Bites: Carefully drop 10 to 15 pretzel bites at a time into the boiling baking soda water. Boil each batch for about 30 seconds, then use a slotted spoon to remove them and place them on the prepared baking sheets.
  6. Add Egg Wash and Salt: Brush each boiled pretzel bite with the egg yolk beaten with water to achieve a shiny golden crust. Immediately sprinkle each with coarse salt for the classic pretzel flavor.
  7. Bake: Bake the pretzel bites in the preheated oven for 12-15 minutes, or until they turn golden brown and puff up slightly.
  8. Serve: Allow the pretzel bites to cool slightly before serving. They are excellent on their own or paired with your favorite dipping sauces.

Notes

  • Ensure the water for the yeast is just warm (around 110°F) to activate yeast without killing it.
  • Kneading dough well is crucial for developing gluten, which gives the pretzels their chewy texture.
  • The baking soda bath is essential for that classic pretzel crust and flavor—do not skip this step.
  • If you prefer, substitute coarse salt with other toppings like sesame seeds or everything bagel seasoning.
  • Store leftover pretzel bites in an airtight container; reheat in the oven to refresh texture.
