Ingredients
Scale
Chicken Mixture
- 1 pound lean ground chicken
- 2/3 cup water
- 1 packet taco seasoning
- 1/4 cup cream cheese, softened
- 1/2 teaspoon paprika
- 1/2 teaspoon Liquid Smoke
Nacho Layers
- 6 cups tortilla chips
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup (4 ounces) shredded cheddar-Monterey Jack cheese
Toppings
- 1 small tomato, diced
- 3 tablespoons minced fresh chives
Instructions
- Cook Chicken: In a large skillet over medium heat, cook and crumble the ground chicken until no longer pink; drain any excess liquid. Add water and taco seasoning to the skillet, bring the mixture to a boil, then reduce the heat and simmer for 5 minutes to allow flavors to meld.
- Add Creamy and Smoky Flavors: Stir in softened cream cheese, paprika, and liquid smoke to the chicken mixture until everything is evenly combined and creamy.
- Layer Nachos: In an ungreased 9×13-inch baking dish, spread half of the tortilla chips in an even layer. Top with half of the chicken mixture, black beans, and shredded cheese. Repeat the layering with the remaining chips, chicken, beans, and cheese.
- Bake: Place the baking dish in a preheated oven at 350°F (175°C) and bake uncovered for 15 to 20 minutes or until the cheese is melted and bubbly.
- Add Fresh Toppings and Serve: Remove the nachos from the oven. Sprinkle diced tomatoes and minced fresh chives evenly over the top. Serve immediately and enjoy the smoky, cheesy goodness.
Notes
- For extra heat, add sliced jalapeños or a dash of hot sauce before baking.
- You can substitute ground turkey for chicken if preferred.
- If cream cheese is too thick to mix easily, soften it in the microwave for about 15 seconds.
- Leftover nachos can be reheated in the oven at 350°F for 10 minutes to maintain crispiness.
- Use fresh cheese and beans for best flavor and texture.
