Ingredients
Scale
Sausage and Vegetables
- 1 lb sausage (your choice)
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- Salt and pepper to taste
Honey Garlic Sauce
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
Garnish
- Fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes and cooking the sausage.
- Prepare Sweet Potatoes: In a large bowl, toss the peeled and cubed sweet potatoes with olive oil, salt, and pepper until evenly coated.
- Roast Sweet Potatoes: Spread the sweet potatoes evenly on a baking sheet and roast them in the oven for 20 minutes to start softening and developing flavor.
- Make Honey Garlic Sauce: While the sweet potatoes cook, whisk together the honey, minced garlic, and soy sauce in a small bowl to create the flavorful glaze.
- Add Sausage and Sauce: Remove the baking sheet from the oven, add the sausage pieces to the sweet potatoes, then pour the honey garlic sauce over everything.
- Toss and Continue Roasting: Toss the sweet potatoes, sausage, and sauce together to coat everything evenly. Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the sausage is fully cooked and sweet potatoes are tender.
- Garnish and Serve: Optionally sprinkle fresh parsley on top for garnish. Serve the dish warm for a comforting meal.
