Instructions
- Preheat Oven: Preheat your oven to 400°F (205°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare Vegetables and Seasonings: In a large bowl, combine the cubed butternut squash, sweet potatoes, and sliced red onion. Add the minced garlic, fresh thyme, fresh rosemary, and olive oil. Season with salt and pepper to taste. Toss everything thoroughly to ensure the vegetables are evenly coated with oil and herbs.
- Arrange on Baking Sheet: Spread the vegetable mixture in a single, even layer on the prepared baking sheet. Try to leave some space between the pieces to allow for proper roasting and browning.
- Roast the Vegetables: Place the baking sheet in the preheated oven and roast for about 45 minutes. Halfway through cooking, around 22-23 minutes, toss the vegetables to promote even browning on all sides. Continue roasting until the squash and sweet potatoes are fork-tender and have a light golden-brown color.
