Description

This Refreshing Crab Pasta Salad is a perfect light and flavorful dish for summer gatherings. Combining tender shell pasta with imitation crab meat, fresh vegetables, and a creamy dill mayonnaise dressing, it’s easy to prepare and sure to please. Chilled for an hour, the salad is delightfully cool and refreshing, garnished with fresh chives for a subtle bite and color contrast.

Ingredients

Scale

Pasta & Protein

  • 8 ounces Medium Shells Pasta (or Orecchiette pasta as a substitute)
  • 8 ounces Imitation Crab Meat (can use real crab for more authentic flavor)

Vegetables

  • 1 cup Frozen Peas (thawed; no need to cook)
  • 1/2 cup Red Onion (peeled and chopped; can soak in water to reduce bite)
  • 1 cup Celery (chopped; fresh for best texture)
  • 1 cup Red Bell Pepper (seeded and chopped; any color bell pepper can be substituted)

Dressing & Seasoning

  • 1 cup Mayonnaise (Greek yogurt can be used as healthier alternative)
  • 1 tablespoon Fresh Dill (chopped or dried; substitute with fresh parsley or chives)
  • Salt & Pepper (to taste)
  • 2 tablespoons Fresh Chives (chopped, for garnish)

Instructions

  1. Preparation Steps: Gather and prepare all ingredients: thaw peas, chop red onion, celery, red bell pepper, dill, and chives.
  2. Boil the Pasta: Bring a large pot of salted water to a boil. Add the medium shells pasta and cook until al dente, about 7-8 minutes. Drain the pasta and immediately rinse it under cold running water to cool it to room temperature and stop the cooking process.
  3. Mix Ingredients: In a large mixing bowl, combine the cooled pasta, imitation crab meat, thawed peas, chopped red onion, celery, and red bell pepper. Add mayonnaise and fresh dill, then gently stir everything until well coated and evenly mixed.
  4. Season & Chill: Season the salad with salt and pepper to taste. Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the salad to chill completely.
  5. Serve: Before serving, garnish the salad with freshly chopped chives. Serve cold as a refreshing side or light main dish.

Notes

  • If you prefer a healthier dressing, substitute the mayonnaise with Greek yogurt.
  • Soaking the chopped red onion in cold water for 10 minutes can reduce its sharpness.
  • Real crab meat can be used instead of imitation crab for a richer flavor.
  • This salad can be made a day ahead and stored covered in the refrigerator.
  • Use fresh herbs like parsley or chives as alternatives to dill depending on your preference.
