  • 1 1/2 cups heavy cream, divided

Instructions

  1. Make the Raspberry Sauce: In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down, about 5 minutes. Stir in the cornstarch mixture and continue cooking for another 2 minutes until thickened. Remove from heat and let cool.
  2. Prepare the White Chocolate Mousse: Melt the white chocolate in a heatproof bowl set over a pot of simmering water (double boiler). Stir until smooth, then let it cool to room temperature.
  3. Whip the Cream: In a separate bowl, whip 1 cup of heavy cream with vanilla extract until stiff peaks form.
