Description

Pepperoni Pizza Quesadillas are a quick and delicious fusion of crispy, golden tortillas filled with melty mozzarella cheese, spicy pepperoni, and rich pizza sauce. Perfect as a snack or meal, these quesadillas are easy to customize with your favorite pizza toppings and come together in just 15 minutes.

Ingredients

Scale

Main Ingredients

  • 4 large flour tortillas (or 2 big ones)
  • 1½ cups shredded mozzarella cheese (or pizza blend for more flavor)
  • 1 cup pepperoni slices (or more, if preferred)
  • ¼ cup pizza sauce (plus extra for dipping)
  • 1 tbsp olive oil (for crisping)

Optional Ingredients

  • ½ tsp Italian seasoning (for extra pizza flavor)
  • A pinch of red pepper flakes (for heat)
  • ½ cup parmesan cheese (for added richness and crispiness)

Instructions

  1. Preheat the skillet: Heat a large skillet over medium heat. Brush the skillet with olive oil or lightly spray with non-stick cooking spray to prevent sticking and help crisp the tortillas.
  2. Assemble your quesadilla: Place one tortilla flat in the skillet. Spread a thin, even layer of pizza sauce over the tortilla, leaving a small border around the edges to prevent spillage. Sprinkle shredded mozzarella cheese evenly over the sauce. Layer pepperoni slices on top of the cheese. If desired, sprinkle Italian seasoning and red pepper flakes for extra flavor and heat. Finish with a generous sprinkle of parmesan cheese for extra richness and a golden crust.
  3. Top and cook: Place the second tortilla over the layered one and gently press it down. Cook for about 3 to 4 minutes until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a spatula and cook the other side for 2 to 3 minutes until cheese melts and the tortilla is crispy and golden on both sides.
  4. Slice and serve: Remove the quesadilla from the skillet and let it rest for a minute to slightly cool and firm up. Slice into wedges and serve immediately with extra pizza sauce on the side for dipping.

Notes

  • For extra cheesy results, add cheddar cheese or mozzarella sticks inside before cooking.
  • Try a veggie version by adding mushrooms, onions, or green peppers to the filling.
  • Increase heat with spicy pepperoni, jalapeños, or a dash of hot sauce.
  • Brush quesadillas with garlic butter before serving for a delicious Italian-inspired finish.
  • Sprinkle parmesan cheese on the outside before cooking and press with spatula to develop a crispy cheesy crust.
  • Air-frying this recipe is a great alternative for a healthier yet crispy version.
