Description

This Parmesan Crusted Chicken Sheet Pan Dinner is a wholesome and flavorful one-pan meal featuring tender chicken breasts coated in a crunchy Parmesan crust, accompanied by roasted red potatoes and fresh green beans. Perfectly seasoned and baked together on a single sheet pan, this easy-to-make recipe offers a convenient, delicious dinner with minimal cleanup.

Ingredients

Scale

For the Chicken

  • 1½ lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • â…“ cup grated Parmesan cheese
  • â…“ cup breadcrumbs (Italian or plain; can add 1 tsp Italian seasoning if using plain breadcrumbs)
  • ½ tsp cracked black pepper
  • ½ – ¾ tsp sea salt

For the Potatoes

  • 2 lb red potatoes, cut into bite-sized pieces (quartered if small, cut into 6ths or 8ths if larger)
  • 1 – 2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated Parmesan cheese
  • Salt and pepper to taste

For the Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the chicken and vegetables.
  2. Prepare and Start Potatoes: Line a sheet pan with parchment paper or spray with cooking oil for easier cleanup. In a medium bowl, toss the red potatoes with minced garlic, olive oil, grated Parmesan, salt, and pepper until evenly coated. Spread the potatoes evenly on one-third of the sheet pan and bake for 10-15 minutes. For more browned potatoes, choose the longer baking time.
  3. Prepare Chicken and Add to Pan: While the potatoes bake, toss the chicken breasts in the same bowl with olive oil, minced garlic, Parmesan, breadcrumbs, cracked pepper, and sea salt to coat completely. Remove the pan from the oven, place the chicken pieces on another third of the sheet pan alongside the partially cooked potatoes.
  4. Prepare Green Beans and Add to Pan: In the bowl used earlier, toss green beans with olive oil, minced garlic, Parmesan (optional), salt, and pepper. Add the green beans to the remaining space on the sheet pan.
  5. Bake Until Done: Return the sheet pan to the oven and bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F (74°C). If you want extra crispy potatoes, switch the oven to broil on high for an additional 4-5 minutes at the end of baking.
  6. Cool and Serve: Remove the pan from the oven and let it cool for a few minutes before serving. Enjoy your flavorful, easy Parmesan Crusted Chicken Sheet Pan Dinner!

Notes

  • For best results, use chicken breasts about 1 inch thick to ensure even cooking.
  • If you prefer gluten-free, use gluten-free breadcrumbs and ensure Parmesan is gluten-free.
  • Adding Italian seasoning to plain breadcrumbs enhances flavor.
  • Broiling at the end crisps up the potatoes but watch carefully to prevent burning.
  • Make sure to trim green bean ends for a tidier presentation and better texture.
  • Internal temperature of the chicken should reach 165°F for safe consumption.
