Description

These small-batch no-bake Oreo cheesecake bites are an easy and delicious treat featuring a buttery Oreo crust topped with a creamy Oreo cheesecake filling. Perfect for a quick dessert, these bites require no oven time and firm up in the freezer within a few hours.

Ingredients

Scale

Crust

  • 9 Oreos
  • 2 tablespoons (26g) salted butter, melted

Cheesecake Filling

  • 5 Oreos, finely chopped
  • 1/4 cup heavy cream
  • 4 ounces cream cheese, softened
  • 3 heaping tablespoons (42g) granulated sugar
  • 1/2 teaspoon vanilla extract

Optional Topping

  • Whipped cream

Instructions

  1. Prepare the baking dish: Line your baking dish with parchment paper and secure it with binder clips or clothespins to keep the paper in place. Set the dish aside for later use.
  2. Make the crust: Place 9 Oreos in a plastic bag and crush them into fine crumbs using a rolling pin or the bottom of a glass. Transfer the crumbs to a medium bowl and mix with the melted butter until well combined. Press the mixture evenly into the prepared baking dish to form the crust.
  3. Whip the cream: In a medium bowl, use a handheld electric mixer to beat the heavy cream until stiff peaks form. This means when you lift the beaters, the peaks stand straight up without collapsing. Set the whipped cream aside.
  4. Make the cheesecake filling: In another medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract together until smooth and well combined. Gently fold in the whipped cream and finely chopped Oreos, taking care not to deflate the mixture.
  5. Assemble and freeze: Spread the cheesecake mixture evenly over the Oreo crust in the baking dish. Cover the dish and place it in the freezer. Freeze until firm, about 3 hours.
  6. Serve: Using the parchment paper, lift the cheesecake out of the dish and cut it into 24 small squares. Optionally, top each bite with a dollop of whipped cream before serving. Enjoy your no-bake Oreo cheesecake bites!

Notes

  • Make sure the cream cheese is softened to room temperature for smooth blending.
  • Use parchment paper with clips to easily remove the cheesecake from the dish for neat cutting.
  • Freeze the bites for at least 3 hours to ensure they set properly before slicing.
  • For a variation, try adding a pinch of cinnamon or a drizzle of chocolate on top.
  • Store leftovers in an airtight container in the freezer for up to 1 week.
