- Additional shredded coconut (for rolling)
Instructions
- Prepare the Coconut Mixture: In a medium bowl, combine 2 cups of shredded sweetened coconut, 1/2 cup sweetened condensed milk, 1 teaspoon vanilla extract (or coconut extract), and 1/4 teaspoon salt. Mix thoroughly until all ingredients are well incorporated. Place the mixture into the refrigerator and chill for 30 minutes to allow it to firm up slightly.
- Shape the Balls: Remove the chilled mixture from the refrigerator. Using a tablespoon measure, scoop out portions and roll each into a smooth ball between your palms. Arrange the formed balls on a baking sheet lined with parchment paper to prevent sticking.
- Optional Coating: For added texture and flavor, either roll each coconut ball in additional shredded coconut or dip them into melted semi-sweet or dark chocolate. If dipping in chocolate, allow the excess to drip off before placing the balls back on the parchment-lined tray.
- Chill: Transfer the prepared coconut balls back into the refrigerator. Let them chill for 1 hour or until the balls are fully set and firm, ready to serve.

- To make the balls easier to shape, ensure your hands are slightly damp or lightly greased.
- Store the coconut cream balls in an airtight container in the refrigerator for up to one week.
