Description

A savory and hearty Mushroom Bacon Swiss Meatloaf combining ground beef and pork with flavorful seasonings, topped with sautéed mushrooms, crispy bacon, and melted Swiss cheese for a comforting dinner.

Ingredients

Scale

Meatloaf Mixture

  • 1 lb Ground Pork
  • 2 lb Ground Beef
  • 2 tbsp Dried Minced Onion
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Paprika
  • 2 tsp Garlic Powder
  • 1 tsp Parsley
  • 1 tsp Ground Mustard
  • 1 tbsp Worcestershire Sauce

Toppings and Sauté

  • 4 strips Bacon (cut into 1 inch pieces)
  • 9 slices Swiss Cheese
  • 1 pint Baby Bella Mushrooms
  • 1 tbsp Minced Garlic
  • 4 tbsp Butter
  • 1 tsp Parsley
  • 1 tbsp Worcestershire Sauce

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the meatloaf.
  2. Mix Meatloaf Ingredients: In a large mixing bowl, combine ground beef, ground pork, dried minced onion, salt, pepper, paprika, garlic powder, parsley, ground mustard, and Worcestershire sauce. Use your hands to thoroughly mix everything together for an even distribution of flavors.
  3. Shape and Bake Meatloaf: Line a 9×9 inch baking dish with parchment paper. Press the meat mixture evenly into the dish. Cover the dish with foil and place it in the preheated oven. Bake for 50 minutes to cook the meatloaf through.
  4. Cook Bacon: During the last 20 minutes of the meatloaf baking time, place bacon pieces in a frying pan over medium-high heat. Cook until the bacon is crispy. Remove the bacon and let it drain on a paper towel-lined plate.
  5. Sauté Mushrooms: Without removing the bacon grease from the pan, reduce the heat to medium. Add butter and allow it to melt. Add baby bella mushrooms, minced garlic, parsley, and Worcestershire sauce. Sauté until the mushrooms are softened and flavorful. Remove from heat.
  6. Add Toppings and Finish Baking: Remove the meatloaf from the oven. Lift it out of the baking dish using the parchment paper and place it on a baking sheet. Dab any excess fat with paper towels. Lay Swiss cheese slices over the meatloaf, allowing a 1-inch overhang around the edges. Spread the sautéed mushrooms evenly on top, then sprinkle the crispy bacon over the mushrooms. Return the meatloaf to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  7. Rest and Serve: Remove the meatloaf from the oven and let it rest for about 5 minutes before cutting into squares. Serve warm for a hearty and delicious meal.

Notes

  • For easier cleanup, use parchment paper to line the baking dish.
  • Make sure to drain excess fat from the cooked meatloaf before adding cheese and toppings to prevent sogginess.
  • You can substitute ground turkey or chicken for a leaner meatloaf option.
  • Feel free to adjust seasoning amounts to suit your taste preferences.
  • Leftovers can be refrigerated for up to 3 days and reheated thoroughly before serving.
