Instructions
- Assemble Roll-Ups: Lay out each slice of corned beef on a clean surface. Top each with a half slice of Swiss cheese. Add about 1 tablespoon of well-drained sauerkraut and a small drizzle (1–2 teaspoons) of sugar-free Thousand Island dressing. Sprinkle with caraway seeds if using.
- Roll Tightly: Roll each slice tightly into a pinwheel or log shape to encase the fillings securely.
- Heat Skillet: Heat butter or olive oil in a skillet over medium heat until melted and warm.
- Cook Roll-Ups: Place the roll-ups seam-side down in the skillet. Cook for 2 to 3 minutes on each side, turning carefully, until the outside is crispy and the cheese inside has melted.
