Ingredients
Scale
Noodles and Proteins
- 8 oz fresh or dried lo mein egg noodles
- 8 oz pork shoulder or tenderloin, thinly sliced
- 3 large eggs, lightly beaten
Sauces and Oils
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp neutral cooking oil (vegetable or canola oil)
Vegetables and Aromatics
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1 medium carrot, thinly sliced
- 1 bell pepper, thinly sliced
- 3 green onions, sliced
Instructions
- Prepare Noodles and Ingredients: Cook the lo mein noodles according to package instructions until tender but still chewy. Drain well and toss with a small amount of neutral cooking oil to prevent sticking. Meanwhile, thinly slice the pork, mince the garlic and ginger, and prepare the carrot, bell pepper, and green onions by slicing them thinly.
- Cook the Pork: Heat a wok or large skillet over medium-high heat and add the neutral cooking oil. Stir-fry the thinly sliced pork until it browns and is fully cooked through. Once done, remove the pork from the pan and set it aside to keep it juicy and tender.
- Scramble the Eggs: In the same wok or skillet, pour in the lightly beaten eggs. Gently scramble them until fluffy yet still moist. Remove the scrambled eggs and set aside with the cooked pork.
- Stir-Fry Vegetables and Aromatics: If needed, add a bit more oil to the pan. Quickly stir-fry the minced garlic and ginger until fragrant, about 30 seconds. Then add the thinly sliced carrots, bell pepper, and green onions. Continue stir-frying until the vegetables are tender-crisp and vibrant in color.
- Combine Everything: Return the cooked pork and scrambled eggs to the pan, along with the cooked noodles. Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together over high heat swiftly to ensure the noodles absorb the sauce and all ingredients are evenly combined and heated through.
- Serve Hot: Once the mixture is fully combined and heated, immediately serve the Egg and Pork Lo Mein for the freshest and most flavorful experience.
Notes
- You can substitute pork with chicken or tofu for variation.
- To keep noodles from clumping, toss them with a little oil right after draining.
- Adjust soy sauce and oyster sauce quantities according to your taste and dietary needs.
- Use fresh ginger and garlic for the best aromatic impact.
- This dish is best served immediately to enjoy the texture contrasts.
