  • 1/2 tsp sea salt
  • 1 pinch black pepper
  • 1 1/2 tbsp tomato paste

Binding Agent

  • 1/2 cup whole wheat breadcrumbs (or up to 3/4 cup as needed)


Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. Blend the ingredients: Combine all ingredients except the breadcrumbs in a high-speed blender or food processor. Pulse the mixture until it is mixed but still retains some texture, ensuring it’s not too smooth.
  3. Add breadcrumbs: Gradually incorporate breadcrumbs into the mixture and pulse again until the mixture becomes firm enough to hold its shape when formed into balls.
  4. Form meatballs: Using your hands, roll the mixture into 1-inch sized meatballs and place them evenly spaced on the prepared baking sheet.
  5. Bake: Bake the meatballs in the preheated oven for 30 to 35 minutes, flipping them halfway through the cooking time. They should be golden brown and firm to the touch when done.
