Ingredients

Scale

Main Ingredients

  • 1 pound Frozen Tater Tots
  • 1 tablespoon Olive Oil
  • 1 pound Breakfast Sausage
  • 6 large Eggs
  • 1/2 cup Half and Half
  • to taste Kosher Salt
  • to taste Freshly Ground Black Pepper
  • 1 can Refried Beans
  • 4 large Flour Tortillas
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1 cup Roma Tomatoes, diced
  • 1/4 cup Chopped Fresh Cilantro Leaves

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and lightly oil a baking sheet to prevent sticking.
  2. Cook Tater Tots: Cook the frozen tater tots according to package instructions, typically about 20 minutes, until they are crispy and golden brown. Set them aside to cool slightly.
  3. Cook Sausage: Heat olive oil in a skillet over medium-high heat. Add the breakfast sausage and cook it for 3-5 minutes, stirring occasionally until browned and cooked through.
  4. Prepare Eggs: In a bowl, whisk the eggs thoroughly. Pour them into the skillet with the sausage and cook until just set. Stir in the half and half, continuing to cook until the eggs thicken. Season the mixture to taste with kosher salt and freshly ground black pepper.
  5. Assemble Burritos: Lay each flour tortilla flat and spread a layer of refried beans down the center. Top with crispy tater tots, the cooked sausage and egg mixture, shredded cheddar and Monterey Jack cheeses, diced tomatoes, and chopped cilantro.
  6. Fold Burritos: Carefully fold the sides of each tortilla inwards and roll tightly burrito-style. Place each assembled burrito seam-side down on the prepared baking sheet to keep them from unfolding.
  7. Bake Burritos: Bake the burritos in the preheated oven for 12-15 minutes until heated through and the tortillas have a slightly golden color.
  8. Serve or Store: Serve the burritos immediately for a warm breakfast or allow them to cool completely before freezing in an airtight container for meal prep and convenience.

Notes

  • Feel free to substitute diced roasted potatoes for the tater tots if preferred.
  • Turkey sausage can be used as a lighter alternative to traditional breakfast sausage.
  • Whole wheat tortillas can be substituted for added nutrition and fiber.
  • Black beans may replace refried beans for a different flavor profile.
  • To make the burritos vegetarian, omit the sausage and add sautéed vegetables or plant-based sausage.
  • Ensure the burritos are wrapped tightly to maintain shape when baking or freezing.
  • Let burritos cool completely before freezing to prevent sogginess.
  • Reheat frozen burritos in the oven or microwave until warmed through before serving.
