Ingredients
Scale
Pasta
- 8 oz fettuccine pasta
Steak and Seasoning
- 1 lb sirloin steak, cut into thin strips
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Sauce
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup beef broth
- 1 cup grated Parmesan cheese
Garnish
- Fresh parsley, chopped (for garnish)
Instructions
- Boil Pasta: Fill a large pot with water and bring it to a rolling boil. Add a generous pinch of salt to the boiling water.
- Cook Pasta: Add the fettuccine pasta to the boiling water and cook for 8-10 minutes, or until al dente, stirring occasionally to prevent sticking.
- Drain and Save Pasta Water: Reserve about 1 cup of pasta water, then drain the rest. Drizzle a little olive oil over the drained pasta to prevent sticking and set aside.
- Season Steak: Season the sirloin steak strips with salt, pepper, and Italian seasoning evenly.
- Heat Oil: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot.
- Sear Steak: Add the seasoned steak strips in a single layer and sear for 2-3 minutes on each side until browned and cooked to your preferred doneness. Then remove from skillet and set aside.
- Sauté Garlic: Reduce heat to medium and add the minced garlic to the same skillet. Sauté for about 30 seconds until fragrant, stirring constantly.
- Deglaze Skillet: Pour in 1 cup of beef broth while scraping the bottom of the skillet to loosen browned bits. Let it simmer for 2-3 minutes to reduce slightly.
- Add Cream: Slowly stir in 1 cup of heavy cream, continuously stirring until the mixture comes to a gentle simmer.
- Melt Cheese into Sauce: Gradually add 1 cup of grated Parmesan cheese, stirring until the cheese melts and sauce becomes creamy. Adjust sauce thickness with reserved pasta water if necessary.
- Season Sauce: Taste the sauce and adjust seasonings by adding more salt, pepper, or Italian seasoning to your preference.
- Combine Steak and Sauce: Return the cooked steak strips to the skillet, stirring to ensure they are evenly coated with the creamy sauce.
- Add Pasta to Sauce: Add the cooked fettuccine to the skillet and gently toss to combine and coat with sauce. Add reserved pasta water if the mixture appears dry.
- Serve: Remove from heat and serve the creamy steak pasta in bowls, garnished with freshly chopped parsley.
- Enjoy: Dig in and savor your delicious creamy steak pasta dinner!
Notes
- Reserve pasta water to adjust sauce consistency – it helps the sauce cling better to pasta.
- Use freshly grated Parmesan for best melting and flavor.
- Adjust steak cooking time based on your preferred doneness level.
- For a lighter sauce, substitute heavy cream with half-and-half or a mixture of cream and milk.
- Fresh parsley garnish adds color and a fresh note, but is optional.
- Ensure to not overcook pasta to keep the ideal al dente texture.
