Description

This creamy roast garlic and lemon pasta sauce combines the mellow, caramelized flavor of roasted garlic with the fresh brightness of lemon juice and zest. Enriched with heavy cream and Parmesan cheese, this sauce offers a rich, velvety texture perfect for coating your favorite pasta. A touch of fresh parsley adds a pop of color and freshness, making it an inviting, flavorful dish perfect for a comforting weeknight meal.

Ingredients

Scale

Roasted Garlic

  • 1 head of garlic
  • 2 tablespoons olive oil

Sauce

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Garnish

  • Fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the garlic.
  2. Prepare Garlic: Cut the top off the head of garlic to expose the individual cloves. Drizzle the exposed garlic with olive oil and wrap the head tightly in foil.
  3. Roast Garlic: Place the foil-wrapped garlic in the oven and roast for 30-35 minutes until cloves are tender and golden brown.
  4. Combine Sauce Ingredients: In a saucepan over medium heat, add the heavy cream, squeeze the roasted garlic cloves out of their skins into the cream, then stir in the lemon zest and lemon juice.
  5. Heat and Stir: Stir the sauce mixture continuously over medium heat until it is well combined and heated through.
  6. Add Cheese and Seasoning: Add the grated Parmesan cheese along with salt and pepper to taste. Stir until the cheese melts completely and the sauce becomes creamy and smooth.
  7. Serve: Pour the warm sauce over your favorite cooked pasta and garnish with fresh parsley before serving.

Notes

  • If you prefer a thinner sauce, adjust the heavy cream quantity or add a splash of pasta water when combining the sauce.
  • Roasting the garlic mellows its flavor and adds a sweet note, making it perfect for this sauce.
  • Freshly grated Parmesan yields the best melting texture and flavor.
  • Use freshly zested lemon for optimal brightness; bottled lemon juice won’t provide the same zest flavor.
  • For a dairy-free version, substitute heavy cream and Parmesan with suitable plant-based alternatives.
