Ingredients
Scale
Batter
- 1 cup pumpkin puree
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ cup milk
- ¼ cup melted butter
- 1½ teaspoons vanilla extract
- ½ cup chopped pecans
Topping
- ½ cup brown sugar
- ½ cup granulated sugar
- 1½ cups boiling water
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch square baking dish to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg until combined evenly.
- Add Wet Ingredients: Add the pumpkin puree, milk, melted butter, and vanilla extract to the dry mixture. Stir gently just until all ingredients are combined, avoiding overmixing to keep the batter tender.
- Prepare Batter: Pour the batter into the prepared baking dish and use a spatula to smooth the surface evenly.
- Add Pecans: Sprinkle the chopped pecans evenly over the top of the batter for added texture and flavor.
- Prepare Topping: In a separate small bowl, combine the brown sugar and granulated sugar for the topping. Evenly sprinkle this sugar mixture over the pecans and batter.
- Add Boiling Water: Carefully pour the 1½ cups of boiling water over the entire cobbler mixture without stirring. The water will create a sauce as the cobbler bakes.
- Bake: Place the cobbler in the oven and bake for 40 to 45 minutes, or until the top is set, golden brown, and the sauce is bubbling around the edges.
- Cool and Serve: Remove from the oven and let the cobbler cool for 10 minutes before serving. Spoon servings that include both the cake and the delicious sauce for full flavor.
Notes
- Use fresh or canned pumpkin puree; avoid pumpkin pie filling which contains spices and sweeteners.
- Be careful when pouring boiling water over the batter to avoid splashing.
- For added warmth, serve with whipped cream or vanilla ice cream.
- This cobbler can be made ahead and reheated gently before serving.
- Leftovers keep well in the refrigerator for up to 3 days.
