A delicious and wholesome Churro Cheesecake Baked Oats recipe combining creamy cheesecake swirls with cinnamon-spiced baked oats, perfect for a comforting breakfast or snack.
Ingredients
Scale
Base
- 1/2 cup rolled oats
- 1/2 medium banana, mashed
- 1/2 cup milk
- 1 egg
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Pinch of salt
Cheesecake Swirl
- 2 tablespoons cream cheese
Topping
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon (for mixing with brown sugar)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a ramekin or small baking dish to prepare it for baking the oats.
- Mix Ingredients: In a bowl, mash the banana thoroughly, then stir in the rolled oats, milk, egg, vanilla extract, maple syrup, cinnamon, and salt. Allow the mixture to sit for a few minutes to let the oats absorb moisture.
- Prepare Ramekin Base: Pour half of the oat mixture into the greased ramekin to form the base layer for the baked oats.
- Prepare Cheesecake Swirl: In a separate bowl, beat the cream cheese until smooth and creamy to ensure easy swirling.
- Add Cheesecake Layer: Drop spoonfuls of the beaten cream cheese into the center of the oat mixture in the ramekin. Gently swirl the cream cheese into the oats to create a marbled effect, then pour the remaining oat mixture on top evenly.
- Bake: Place the ramekin in the oven and bake for 25 to 30 minutes, or until the baked oats turn golden and are set through in the center.
- Add Topping: Immediately after removing the baked oats from the oven, mix brown sugar with a bit of cinnamon and sprinkle this mixture generously over the top for a sweet, churro-inspired finish.
- Cool and Serve: Allow the baked oats to cool slightly before serving. Enjoy warm for the best flavor and texture.
Notes
- You can substitute milk with any plant-based milk for a dairy-free version.
- Ensure the cream cheese is softened to make the swirling process easier.
- Use a small baking dish or ramekin to keep the baking time consistent.
- Letting the oat mixture sit before baking helps achieve a better texture.
- For an extra crunch, sprinkle some chopped nuts or granola on top after baking.
