Ingredients
Scale
Wraps
- 2 large tortillas (regular or low-carb/high-protein)
Chicken Filling
- 7 oz cooked chicken (about 200 grams, chopped; rotisserie chicken works great)
- 2 garlic cloves (minced or grated; adjust to taste)
- 2 tablespoons light mayonnaise
- 1 tablespoon light Greek yogurt (or plain yogurt)
- 2 teaspoons hot sauce (such as Frank’s)
- ¼ teaspoon salt
- 3 oz grated cheese (about 90 grams; cheddar blend used)
- 1 green onion (chopped)
- Olive oil spray (for cooking)
Instructions
- Mix the Chicken Filling: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, light Greek yogurt, hot sauce, and salt thoroughly. This mixture will be flavorful and slightly creamy with a spicy kick.
- Prepare the Wraps: Lay out each tortilla flat on a clean surface. On the lower third of each tortilla, sprinkle about 2 tablespoons of grated cheese. Then top with approximately â…” cup of the chicken mixture per wrap. Add another tablespoon of cheese on top, followed by a sprinkle of chopped green onion.
- Roll the Wraps: Fold in the sides of the tortilla over the filling, then roll tightly from the bottom to form a secure wrap, enclosing all the filling.
- Heat the Pan: Place a non-stick pan over medium-high heat and spray the surface lightly with olive oil to prevent sticking and help crisping.
- Cook the Wraps: Position the wraps seam-side down in the pan. Cook for 3–4 minutes until the bottom is crispy and golden. Flip and cook the other side for another 3–4 minutes, covering the pan with a lid to allow the inside to heat evenly and the cheese to melt.
- Serve: Remove the wraps from the pan, slice each in half diagonally, and serve warm for a satisfying, delicious meal.
Notes
- You can use rotisserie chicken or leftover cooked chicken to save prep time.
- Adjust the amount of garlic and hot sauce to suit your taste preference.
- For a healthier wrap, opt for low-carb or whole wheat tortillas.
- Use a non-stick pan and olive oil spray to reduce added fat while achieving crispiness.
- Covering the pan while cooking helps melt the cheese and warms the filling through.
- These wraps can be customized with additional veggies such as bell peppers or spinach for extra nutrition.
