Description

Delightful and creamy Cheesecake Taquitos featuring a smooth cream cheese filling wrapped in warm tortillas, rolled and pan-fried to golden perfection, then coated with a cinnamon-sugar mixture for a crispy, sweet treat.

Ingredients

Scale

Filling

  • 2 blocks (8 ounces each) cream cheese, softened
  • 1/2 cup sour cream
  • 2 tablespoons granulated sugar
  • 2 teaspoons vanilla extract

Taquitos

  • 7 to 8 small (8-inch) flour tortillas
  • 1/2 cup salted butter
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Prepare the filling: In a large bowl, beat the softened cream cheese, sour cream, 2 tablespoons of granulated sugar, and vanilla extract together until smooth and creamy with no lumps remaining.
  2. Fill the tortillas: Warm the tortillas in the microwave for about 10 seconds to make them more pliable. Take one tortilla at a time and spread approximately 1/3 cup of the cheesecake filling evenly along one end. Roll the tortilla tightly but leave the ends open. Repeat this process for each tortilla until all filling is used.
  3. Prepare the cinnamon sugar coating: In a shallow bowl, combine 1 cup granulated sugar with 2 teaspoons ground cinnamon and mix thoroughly.
  4. Cook the taquitos: In a large skillet, melt the 1/2 cup salted butter over medium heat. Once melted and hot, carefully place the rolled taquitos seam side down into the butter. Fry them, turning occasionally, until all sides are golden brown and crispy, about 3-4 minutes per side.
  5. Coat with cinnamon sugar: Using tongs, lift each cooked taquito from the skillet and immediately roll it in the cinnamon sugar mixture until well coated.
  6. Serve warm: Arrange the taquitos on a serving plate and enjoy them warm for the best creamy and crunchy texture experience.

Notes

  • Softening the cream cheese beforehand is crucial to achieve a smooth filling.
  • Heating the tortillas briefly helps prevent them from cracking when rolling.
  • If preferred, use unsalted butter and add a pinch of salt for better control over saltiness.
  • Serve with fresh fruit or a drizzle of chocolate sauce for added flavor variety.
  • Leftover taquitos can be reheated in a skillet or oven to maintain crispiness.
