Ingredients
Scale
Buffalo Chicken Filling
- 1 package (8 ounces) cream cheese, room temperature
- 2 cups (280g) rotisserie chicken, shredded and chopped
- 1 cup (113g) mozzarella cheese, shredded
- 1 cup (113g) sharp cheddar cheese, shredded
- 1/3 cup (84g) buffalo sauce
Puff Pastry
- 1 sheet puff pastry, thawed
- 1 large egg, beaten
For Serving and Garnish
- Ranch dressing, for drizzling
- Extra buffalo sauce, for drizzling
- Parsley, for garnish
Instructions
- Preheat the Oven and Prepare the Baking Sheet: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Make the Buffalo Chicken Filling: In a medium bowl, combine the cream cheese, shredded rotisserie chicken, mozzarella cheese, sharp cheddar cheese, and buffalo sauce. Mix thoroughly until all ingredients are well incorporated and set aside.
- Prepare the Puff Pastry: Lightly flour your work surface and roll out the thawed puff pastry into a 9×12-inch rectangle, ensuring an even thickness to support the filling.
- Fill and Roll the Pastry: Spread the buffalo chicken mixture evenly over the puff pastry, leaving a small border around the edges. Carefully roll the pastry into a tight log, sealing the edges as you go to prevent filling from escaping. Slice the log into 1-inch pieces.
- Bake the Roll-Ups: Transfer the roll-ups to the prepared baking sheet. Brush the tops with the beaten egg to achieve a beautiful golden finish. Bake for 15–18 minutes or until the pastry is puffed and golden brown. For an extra warm filling, spoon some additional buffalo chicken mixture on top and bake for another 6–8 minutes.
- Serve and Enjoy: Once baked, drizzle the roll-ups with extra buffalo sauce and ranch dressing. Garnish with fresh parsley and serve warm as a flavorful and spicy appetizer.
Notes
- Use rotisserie chicken for convenience and flavor, but leftover cooked chicken works well too.
- For extra spice, add a pinch of cayenne pepper or hot sauce to the filling mixture.
- Puff pastry should be fully thawed to avoid cracks while rolling.
- If you prefer a dairy-free option, substitute cream cheese and shredded cheeses with vegan alternatives.
- Serve with extra ranch or blue cheese dressing for dipping if desired.
