- 1 cup frozen peas and diced carrots blend

- 2 tablespoons sesame oil
- 2 tablespoons vegetable oil
- 3 tablespoons soy sauce

- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat Griddle: Set your Blackstone griddle to medium-low heat, approximately 350°F, to prepare for cooking the ingredients evenly without burning.
- Cook Chicken: Add vegetable oil to the hot griddle. Place the diced chicken pieces on the griddle and sauté, flipping occasionally, until the chicken is fully cooked through, about 4–6 minutes. Then move the cooked chicken to a cooler zone of the griddle to keep warm.
- Sauté Veggies: Add the frozen peas and diced carrots to the hot zone of the griddle. Cook, stirring occasionally, for 3–5 minutes until the vegetables are tender. Move these cooked veggies aside with the chicken on the cooler part of the griddle.
- Scramble Eggs: Pour the lightly beaten eggs onto the griddle at the hot zone. Let the eggs set slightly, then scramble them until cooked through. Move the scrambled eggs to the side along with the chicken and veggies.
- Fry Rice: Add the cold, cooked rice to the hot griddle. Drizzle sesame oil and soy sauce evenly over the rice. Season with salt and black pepper. Stir-fry the rice for 3–4 minutes, allowing it to get crispy in spots and fully heated.
- Combine Everything: Add the cooked chicken, sautéed vegetables, and scrambled eggs back onto the griddle with the rice. Toss all ingredients together thoroughly until everything is evenly coated with sauce and heated through.
- Serve Immediately: Remove from heat and serve the chicken fried rice hot. Optionally garnish with sliced green onions or toasted sesame seeds for added flavor and presentation.
