Description

This Black Garlic Teriyaki Sauce recipe combines the rich, sweet, and umami flavors of black garlic, fresh ginger, and traditional teriyaki ingredients to create a thick, glossy sauce perfect for glazing meats, vegetables, or noodles. With a blend of soy sauce, sesame oil, brown sugar, and honey, this homemade sauce offers a deep and complex flavor that elevates any dish.

Ingredients

Scale

Main Ingredients

  • 2 Black Garlic Cloves, whole
  • 1/2 tsp Fresh Ginger
  • 1/3 cup Soy Sauce
  • 1/4 tsp Sesame Oil
  • 2 Tbsp Brown Sugar
  • 1 Tbsp Honey

Liquid & Thickening Agents

  • 1/2 cup Water (for blending)
  • 1 cup Water, cool (for cornstarch mixture)
  • 1 Tbsp Cornstarch

Instructions

  1. Blend Ingredients: In a blender, combine 2 whole black garlic cloves, 1/2 teaspoon fresh ginger, and 1/2 cup water. Blend for about 20 seconds or until the mixture is smooth and well incorporated.
  2. Cook Sauce: Transfer the blended mixture into a saucepot. Add 1/3 cup soy sauce, 1/4 teaspoon sesame oil, 2 tablespoons brown sugar, 1 tablespoon honey, and a cornstarch slurry made by mixing 1 tablespoon cornstarch with 1 cup cool water. Stir all ingredients thoroughly to combine.
  3. Thicken Sauce: Place the saucepot over medium heat and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer gently for about 15 minutes. Stir occasionally during this simmering to prevent sticking and to help the sauce thicken to a glossy consistency that coats the back of a spoon.
  4. Serve: Remove the pot from heat. Use the black garlic teriyaki sauce immediately by drizzling or glazing it over your choice of meats, vegetables, or noodles. Store any leftover sauce in an airtight container in the refrigerator for future use.

Notes

  • This sauce pairs exceptionally well with grilled chicken, stir-fried vegetables, or as a dipping sauce for dumplings.
  • Adjust the sweetness by varying the amount of brown sugar and honey according to your taste preferences.
  • Use fresh black garlic for best flavor; it is softer and less pungent than regular garlic.
  • Reheat leftover sauce gently on the stovetop or in the microwave to maintain its texture and flavor.
