Description

These Apricot Coconut Pecan Bars are a deliciously chewy and naturally sweet snack made with dried apricots, unsweetened shredded coconut, and crunchy pecans, bound together with honey and coconut oil. Perfect for a healthy treat, these bars are easy to prepare and bake to golden perfection.

Ingredients

Scale

Dry Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup shredded coconut, unsweetened
  • 1/2 cup pecans, chopped

Wet Ingredients

  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract

Other

  • 1/4 teaspoon salt

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper to ensure easy removal of the bars later.
  2. Combine Dry Ingredients: In a medium-sized bowl, mix together the chopped dried apricots, shredded coconut, and chopped pecans until well distributed.
  3. Melt Wet Ingredients: In a small saucepan over low heat, gently melt the coconut oil. Once melted, remove from heat and whisk in the honey or maple syrup, vanilla extract, and salt until fully combined.
  4. Mix Wet and Dry: Pour the melted coconut oil mixture over the dry ingredients. Stir thoroughly to coat all the dry ingredients evenly with the wet mixture, ensuring the bars will hold together.
  5. Press Mixture Into Pan: Transfer the combined mixture into the prepared baking pan. Press it down firmly and evenly to form a compact layer for the bars.
  6. Bake: Bake in the preheated oven for 20 to 25 minutes, or until the edges start turning a golden brown color, indicating the bars are baked through.
  7. Cool and Cut: Remove the pan from the oven and let the bars cool completely in the pan. Once cooled, lift out using the parchment paper and cut into 9 equal squares.

Notes

  • You can substitute honey with maple syrup to make the bars vegan.
  • Store the bars in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
  • For added texture, consider tossing the nuts in a little cinnamon before mixing.
  • Make sure to press the mixture firmly into the pan to help the bars hold together well.
  • These bars work well as a quick grab-and-go snack or a light breakfast option.
