- 2 tablespoons honey
- 1–2 tablespoons unsweetened almond milk (as needed for texture)
Instructions
- Combine Ingredients: In a large bowl, mix the rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract together until a dough forms.
- Adjust Texture: If the mixture feels dry, add unsweetened almond milk one tablespoon at a time, stirring well after each addition, until the mixture holds together easily.
- Add Chocolate Chips: Gently fold the mini dark chocolate chips into the dough until evenly distributed.
- Form Balls: Using about one tablespoon of the mixture per ball, scoop and roll the mixture into round balls.
- Chill: Place the formed balls on a parchment-lined sheet and refrigerate for 20 minutes to firm up and set.
- Store: Keep the protein balls in an airtight container in the refrigerator for up to one week or freeze them for up to one month for longer storage.
